When buying used, check the stainless interior surfaces for scoring and corrosion, the tightness of the manhole cover, valves and outlet, the condition of frame, axles and brakes, and a complete cleaning and maintenance history, since hygiene-sensitive bodies must be regularly inspected and certified.
